White Bean Turkey Chili

Ingredients:

  • Cooking spray
  • 20 oz. lean ground turkey breast
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 1 15 oz can diced tomatoes with juice
  • 2 15 oz cans Great Northern Beans, drained and rinsed
  • 2 small cans V-8 juice
  • 1 TBSP chili powder
  • ½ tsp ground cumin
  • 1 ½ tsp. salt
  • 1 tsp. black pepper

Directions:

  1. Chop your onion and bell pepper.
  2. Spray a large saucepan with cooking spray and add the ground turkey, onion and green pepper.
  3. Cook over medium heat about 8 minutes or until the turkey is crumbled and no longer pink.
  4. Stir in tomatoes, beans, V-8 juice, chili powder, cumin, salt and pepper.
  5. Bring the mixture to a boil, the reduce the heat to low.
  6. Cover and simmer for 20 minutes.
  7. Serve with sour cream, grated cheddar cheese and cilantro for garnish if desired.
